Ingredients
- 2 cups Basmati rice , cooked (Leftovers are better)
- 1 Onion , finely chopped
- 1 Tomato , chopped
- 1 cup Sweet corn , frozen and thawed
- 1 clove Garlic
- 2 Green Chillies , chopped
- 1/2 teaspoon Cumin powder (Jeera)
- 1 teaspoon Red Chilli powder
- 1/2 teaspoon Paprika powder
- 1/4 teaspoon Black pepper powder
- 2 tablespoon Extra Virgin Olive Oil
How to make 15 Minutes Mexican Fried Rice Recipe
To begin making the 15 Minutes Mexican Fried Rice Recipe, heat one tablespoon olive oil in a skillet or wok and add the finely chopped onions into it.
Saute the onions and garlic for couple of minutes till the onion become soft.
Next add the chopped tomatoes, sweet corns and chillies into the pan and cook for another 3 to 4 minutes until the tomatoes become soft.
Once done, stir in all the seasonings (including salt) into the pan. Add a tablespoon of olive oil along with the pre-cooked rice into the pan.
Give it a good stir and cook the Mexican Fried Rice for another 3 to 4 minutes. Check the salt to taste and adjust accordingly. Serve it hot.
