Ingredients
- 1 tablespoon Oil
- 6 cloves Garlic , finely chopped
- 1 inch Ginger , julienned
- 2 Green Chillies , slit lengthwise
- 1 Onion , cut into one inch squares
- 300 grams Tofu , cut into squares
- 1 Green Bell Pepper (Capsicum) , cut into one inch squares
- 1/2 cup Mixed vegetables , like broccoli, bok choy etc
- Salt , to taste Ingredients for the Curry (Sauce)
- 1 tablespoon Red Chilli Paste
- 2 tablespoon Light soy sauce
- 1 tablespoon White Wine Vinegar
- 1 tablespoon Honey
- 1 tablespoon Tomato Ketchup
- 1-1/2 tablespoon Corn flour
- 1/2 cup Water
How to make Tofu Stir Fry Curry Recipe
To begin making the Tofu Stir Fry Curry, first make the red chilli paste, for this soak 3 dried red chilies for 30 mins and grind to a fine paste. Keep the red chilli paste aside.
Heat oil in a non-stick pan and add ginger, garlic and green chilies. Saute on high heat for 30 seconds and add the onions.
Cook the onions for 2-3 minutes. The onions should start to become translucent but still be crunchy. Add the tofu, bell peppers and other vegetables and stir-fry for 3-4 minutes.
While the vegetables are getting cooked, combine all the ingredients for the curry sauce.
Add the curry sauce to the vegetables and stir to combine, until it starts to become thick.
Keep stirring as you cook on medium heat for a few minutes till you are happy with the consistency of the sauce and turn off the heat. Check the salt and spices and adjust to suit your taste. The Tofu Curry is now ready to be served.
