Beet Apple Salad Recipe with Apple Cider Vinaigrette is a lovely summer salad with some crunchy red delicious apple  and steamed beets served on a bed of mixed salad greens, some boiled sweet corn and black olives that all add to the lovely taste and texture.

A colourful salad that is tossed in a flavour burst salad dressing made of acidic apple cider vinegar, honey, salt and a splash of tabasco sauce.

How to make Beet Apple Salad Recipe with Apple Cider Vinaigrette

  1. To begin making the Beet Apple Salad Recipe with Apple Cider Vinaigrette, prep all ingredients and keep ready. Wash and pat dry salad greens and keep aside.

  2. Peel the beets, cut into half place them in a pressure cooker along with 2 tablespoons of water. Pressure cook for 2 whistles and turn off the heat. 

  3. Once the pressure releases,  open the cooker and cut the beets into thin slices and allow it to cool.

  4. Mix salad greens, apples, olives, and corn in a large mixing bowl and place in a refrigerator 

  5. Place the beets right at the end. 

  6. Add all the dressing ingredients to a mixing bowl and beat well with a fork until well combined. You can also use a bottle and shake to mix.

  7. When ready to serve, toss in the salad dressing, steamed beets along with the apple, walnuts, olives, corn and salad leaves and serve chilled.
