Ingredients

  • 2 cups Bottle gourd (lauki) , peeled and grated
  • 1/2 cup Whole Wheat Flour
  • 1/2 cup Gram flour (besan)
  • 1/2 cup Sooji (Semolina/ Rava)
  • 1 inch Ginger , grated
  • 2 sprig Coriander (Dhania) Leaves , finely chopped
  • 1 tablespoon Lemon juice
  • 1/4 teaspoon Baking soda , or enos fruit salt
  • 1/4 teaspoon Asafoetida (hing)
  • 2 teaspoons Sugar
  • 1/2 teaspoon Red Chilli powder
  • 1 teaspoon Turmeric powder (Haldi)
  • 1 tablespoon Oil
  • Salt , to taste
  • Ingredients for Seasoning
  • 2 tablespoons Oil
  • 1 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1 tablespoon Sesame seeds (Til seeds)
  • 1/4 teaspoon Asafoetida (hing)
  • 5 sprig Curry leaves , finely chopped
  • 6 sprig Coriander (Dhania) Leaves , chopped for garnish

How to make Doodhi Na Muthiya Dhokla Recipe: Healthy Gujarati Steamed Snack with Bottle Gourd

  1. To begin making the Doodhi Na Muthiya Dhokla Recipe, prep all the ingredients and keep them ready.

  2. 1/2 of a large bottle gourd, will give approximately 2 cups of grated gourd. Peel and grate the bottle gourd (doodhi).

  3. Squeeze out the excess water from the bottle gourd with your fingers. (You can use this water in your dals or rice or simply drink it as a juice with a little salt.)

  4. In a large mixing bowl, combine grated doodhi, whole wheat flour, gram flour, semolina, sugar, red chilli powder, turmeric powder, soda/enos, oil and salt. Knead into a firm dough without using any water.

  5. Apply 1/4 teaspoon of oil in the palm of your hands and divide the mixture into 4 equal portions. Shape each portion into a cylindrical roll. You can also optionally shape into small 1 inch cylinders and place these in greased idli plates. 

  6. Arrange the rolls on a greased steamer plate or idli plate and steam on high heat for 15 to 20 minutes. Repeat the same process for the remaining muthia mixture.

  7. Once it is steamed, turn off the heat . Gently remove from the steamer and place it on a platter and allow the muthias to cool before you can cut them into rounds. The Muthia's will firm up in the cooling process which will make it easier for you to slice them into 1 inch rounds.

  8. Once all the Doodhi Muthia's are steamed, slice them into 1 inch rounds and keep aside.

  9. For the seasoning, heat oil in a large pan over medium heat. Add in the mustard seeds and sesame seeds and allow it to crackle.

  10. Finally add the chopped curry leaves and asafoetida and saute for a few seconds. Add the sliced doodhi muthia rounds into the seasoning and toss for a few minutes and turn off the heat.

  11. Serve the Doodhi Na Muthiya Dhokla along with Green Chutney and Masala Chai for a snack or even for a light dinner.
