It is steamed in a pressure cooker or a steamer. Kuttu Ka Dhokla is made from a blend of sama flour and buckwheat flour which is soaked in some yogurt and water. Traditionally Dhokla batter is fermented and steamed. It is a famous dish in Gujarati Cuisine. It is then finished by adding a tempering of mustard seeds and curry leaves on top of the Dhokla. Since Kuttu Ka Dhokla is preferred during Navratri fasting,it is kept simple and made quick without any tempering. Ingredients
- 1 cup Buckwheat Flour (Kuttu Ka Atta)
- 1/4 cup Sama Flour (Little Millet)
- 1/2 cup Curd (Dahi / Yogurt)
- 1 Green Chilli , ground to paste
- 5 sprig Coriander (Dhania) Leaves , finely chopped
- 3/4 teaspoon Enos Fruit Salt
- 1 teaspoon Black pepper powder
- Salt , to taste
- Kashmiri Red Chilli Powder , to sprinkle on dhokla
- Coriander (Dhania) Leaves , chopped for garnish
- 1 tablespoon Fresh coconut , for garnish
- Oil , as required
How to make Farali Dhokla - Kuttu Ka Dhokla Recipe
To begin making Farali Dhokla - Kuttu Ka Dhokla Recipe combine the buckwheat flour, sama ke chawal, yogurt, chilli paste, coriander leaves, black pepper,salt to taste, in a large mixing bowl and allow it to rest for about 10 minutes.
Stir in a tablespoon of oil and the enos fruit salt into the batter.
Grease Dholka plates and pour the dhokla batter, sprinkle red chilli powder on the batter and steam on high heat in a Dhokla & Idli Steamer for about 10 to 15 minutes until done. A tester when inserted in the centre should come out clean.
Garnish your Farali Dhokla - Kuttu Ka Dhokla with coriander leaves and fresh grated coconut and serve.
