Here's a simple and full of flavour that you can pack for your Office Lunch Box or your Kid's Lunch Box. This meal includes Beetroot Rice and Carrot Tadka Raita, which is tasty, filling and healthy.
We all know how nutritious Beetroot is, therefore we thought of making a Beetroot Rice where rice is mixed with beetroot, sambar powder, cardamom powder, some coarsely pounded peanuts and finely chopped coriander leaves. The peanuts in this rice gives it a nice texture and flavour.
Along with the Beetroot Rice, we have served Carrot Tadka Raita. In this Raita, Curd is mixed with grated carrots and then tempered with cumin seeds, garlic and asafoetida. You can also add a bowl of simple curd with this rice. Curd is good to eat in summers, as it helps in digestion and also keep your body cool.
You can also pack any Indian Salad such as Satvik Carrot Sprout Salad, Kachumber Salad etc with this meal to make it more nutritious and filling
