Ingredients
- 1-1/2 cups Basmati rice
- 1 Tomato , finely chopped
- 1 Onion , finely chopped
- 6 cloves Garlic , finely chopped
- 1 inch Ginger , finely chopped
- 2 Green Chillies , slit into halves
- 2 sprig Coriander (Dhania) Leaves
- 1 tablespoon Lemon juice
- 200 grams Button mushrooms , thinly sliced
- Salt , to taste
- 4 tablespoon Extra Virgin Olive Oil Ingredients for Biriyani Spice Mix
- 2 Cloves (Laung)
- 1 teaspoon Coriander (Dhania) Seeds
- 1 teaspoon Cumin seeds (Jeera)
- 1/2 teaspoon Whole Black Peppercorns
- 1 inch Cinnamon Stick (Dalchini)
- 1 teaspoon Fennel seeds (Saunf)
- 2 Cardamom (Elaichi) Pods/Seeds
- 2 Bay leaves (tej patta)
- 1 teaspoon Turmeric powder (Haldi)
- 1 teaspoon Red Chilli powder
- Asafoetida (hing) , A pinch
How to make Peppery Mushroom Biryani Recipe
To begin making the Peppery Mushroom Biryani Recipe, first step is to make the Biryani Spice Mix.
In a small pan, dry roast the ingredients listed under Biryani Spice Mix on medium heat. Once it is roasted, grind into a fine powder and keep aside.
Heat oil a large saucepan with a lid; add the ginger, garlic and sauté for a minute. Add onions and sauté for a minute. Add the slit chillies. Add the tomatoes and allow to cook on medium heat until tender and when the oil starts to separate.
Stir in the sliced mushrooms and increase the heat to high. Allow it to cook for about 3-4 minutes or until you start seeing the mushrooms start shrinking in size and change color.
Add the Biryani Spice Mix powder and stir well. Stir in the Rice and 3 cups of water. Combine all the ingredients well.
Finally stir in the the lemon juice, salt to taste and cover the pan. Cook the Mushroom Biryani on medium heat until water is completely absorbed the the biryani is cooked.
Garnish the Mushroom Biryani with chopped coriander leaves or roasted raisins & cashews or caramelized onions.
