Ingredients

  • 2 Green zucchini , cut into 1/4 inch thin long slices
  • 200 grams Mozzarella cheese , cut into thin slice
  • 10 Cherry tomatoes , halved
  • Few sprig Basil leaves
  • Salt and Pepper , to taste
  • Extra Virgin Olive Oil , as needed
  • Balsamic Vinegar , as needed

How to make Roasted Zucchini Caprese Salad Rolls Recipe

  1. To begin making the Roasted Zucchini Caprese Salad Rolls, first prepare the zucchini and mozzarella by cutting them into thin slices.

  2. Heat a grill pan on medium heat and grill the zucchini on the pan with a little salt until its soft and has grilled  marks on it. Take care to cook the zucchini slices carefully, as they might tend to bread.

  3. Once the zucchini is grilled, remove from the pan and place it on a platter to cool completely.

  4. Once the zucchini has cooled, place it on a work surface. Place the sliced mozzarella on the zucchini, then a halved tomato along with a basil leaf in the edge. Roll them up to make a pinwheel and place the edge side facing down so the rolls does not open up.

  5. Proceed the same way with the remaining zucchini and cheese.

  6. Arrange the rolls on a serving platter, drizzle a bit of olive oil, balsamic vinaigrette, sprinkle some salt and pepper.
