Thumbprint cookies with Orange Curd are crumbly and delicious, melt in the mouth cookies are a cookie lover’s delight. The original recipe uses lemon curd but I decided to try a variation instead. I kept the lemon juice and zest in the recipe.

Ingredients

  • 250 grams Butter (Unsalted) , at room temperature
  • 110 grams Icing Sugar
  • 2 Egg yolks
  • 1 tablespoon Lemon zest
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Kosher salt
  • 600 grams All Purpose Flour (Maida)
  • 1 cup Orange curd
  • 1-2 tablespoons Sugar , powdered

How to make Thumbprint Cookie Recipe With Orange Curd Recipe

  1. To begin making the Thumbprint Cookie Recipe with Orange Curd, heat oven to 180 C. Line 2 cookie trays with parchment paper and keep aside.

  2. Beat butter and sugar in a large bowl with mixer until well blended. Beat in yolks, lemon zest, lemon juice, and salt. With mixer on low speed, beat in flour just until moist clumps form. Gather dough together.

  3. Take walnut sized balls of dough and roll them well. Place cookie dough balls on the trays with about 1 inch between them.

  4. Make an indentation in the center of each ball with your thumb.

  5. Bake cookies until firm and lightly golden on bottom, about 18 to 20 minutes.

  6. Remove cookies from oven and immediately fill indentations with curd or jam. Return to oven and bake 2-3 minutes longer to set curd/ jam

  7. When done, dust the cookies with powdered sugar before serving.
