Ingredients
- 500 grams Colocasia root (Arbi)
- 2 Onions , roasted ground to a paste
- Onions , sliced
- 1 inch Ginger , pound
- 4 cloves Garlic , pound
- 1 teaspoon Red Chilli powder
- 1 teaspoon Turmeric powder (Haldi)
- 2 teaspoon Garam masala powder ,
- 3 teaspoon Coriander Powder (Dhania)
- 1 Cardamom (Elaichi) Pods/Seeds
- 1 inch Cinnamon Stick (Dalchini)
- 3 Cloves (Laung)
- 1/2 cup Curd (Dahi / Yogurt)
- Salt , to taste
- Extra Virgin Olive Oil , for cooking
- Coriander (Dhania) Leaves , a small bunch finely chopped
- Rose Petals , for garnish (Optional)
How to make Awadhi Style Khatti Arbi Ka Salan Recipe - Roz Ka Khana With Figaro Olive Oil
We begin making the Awadhi Style Arvi Ka Saalan Recipe, first cook the Arbi in a pressure cooker adding little water for 3 to 4 whistles and turn off the heat. Once the pressure has released, peel the skin and cut the Arbi into small cubes and keep aside.
The next step heat oil in a pan, saute the onion that has to ground to a paste, saute till it is brown and cool it down. Once it is cooled grind into a paste.
Heat oil in a pan, add cloves, cardamom, and cinnamon. Let it roast in the oil for few seconds.
Add pound ginger, garlic ,and sliced onions and Saute till it is translucent and the raw smell goes away. Once that is done add the onion paste. Saute for 5 more minutes.
Add in all the spice powders and season well with salt as required. At this point you can add in the curd as well the colocasia roots. Give it a toss and mix the gravy well with the roots.
Cover and cook for a few minutes until the masala is well incorporated into the Arbi. Once done, check the taste and adjust the seasonings accordingly.
