Mini Chilli Cheese Aloo Kulcha Recipe is a simple kulcha stuffed with melt in the mouth cheese. This cheese kulcha can be paired along with dals and gravies, and for a change can be served as is as a short eat with your other appetizers. 

I have served these delicious Mini Chilli Cheese Aloo Kulcha with a roasted garlic dip made with Britannia roasted garlic cheese spreadz, hung yogurt, cucumber and saffron. This is a refreshing and mouthwatering dip can be made ahead of time and stored in the refrigerator as well. This dip tastes great with chips and pakoras as well. 

The kulcha dough is made by combining all purpose flour and whole wheat flour, flavoured with green chilies and the addition of yeast makes all the difference to the texture of the kulcha. 

Stuffing it with grated cheese, lifts up the kulcha, adding another dimension of taste to this lip smacking Chilli Cheese Stuffed Kulcha. Ingredients

    For the kulcha dough
  • 1 cup Whole Wheat Flour
  • 1 cup All Purpose Flour (Maida)
  • 1 1/2 teaspoon Active dry yeast
  • 1/4 cup Curd (Dahi / Yogurt)
  • 1 teaspoon Sugar
  • Salt , to taste
  • Water , warm,to knead the dough
  • 1 teaspoon Oil
  • For the Kulcha stuffing
  • 6 Potatoes (Aloo) , boiled and mashed
  • 2 Onions , finely chopped
  • 5 Green Chillies , finely chopped
  • 1 teaspoon Chaat Masala Powder
  • 1 teaspoon Amchur (Dry Mango Powder)
  • 200 grams Britannia Cheezza , grated
  • Mint Leaves (Pudina) , small bunch, finely chopped
  • Ghee , to cook the kulchas
  • For the Roasted Garlic Dip
  • 2 tablespoons Britannia Cheese Spread - Roasted Garlic
  • 1/2 cup Hung Curd (Greek Yogurt)
  • 1/4 cup Cucumber , finely chopped
  • Saffron strands , a few
  • Parsley leaves , a few, finely chopped
  • Salt , a pinch

How to make Mini Chilli Cheese Aloo Kulcha Recipe

  1. To begin making the Mini Chilli Cheese Aloo Kulcha Recipe,we will first make the dough and keep it ready. 

  2. In a mixing bowl, combine the whole wheat flour, all purpose flour, yeast, curd, sugar, salt and mix with your fingers. 

  3. Next add little warm water at a time and knead to make a soft dough.

  4. Finally drizzle some oil and knead for a few more minutes. Cover the pan and allow it to rest and rise for about 2 hours.

To make the stuffing for the Kulcha.
  1. Into a bowl, add in the mashed potatoes, onions, green chillies, amchur powder, chaat masala powder, salt to taste and finally mint leaves . Mix well to combine.

  2. Finally we will stuff the kulchas.

  3. Remove the dough from the warm place, punch the dough back with your knuckles. 

  4. Now divide the dough into equal portions of lemon ball sizes, dust in flour and flatten them using a rolling pin to about 2 inch diameter. 

  5. Spoon the aloo filling into the kulcha dough, then add the grated Britannia cheezza and close the edges.

  6. Gently roll it and keep aside. Make a few more Cheese Aloo Kulcha Recipe before you begin to cook them.

  10. Transfer the Roasted Garlic Dip to a serving bowl and serve along with the Chilli Cheese Kulcha as an appetizer for parties.
