Jamaican Style Vegetarian Stew Recipe
A soupy Jamaican style stew that are cooked with a lot of vegetables and finally simmered in coconut milk for delicious and lush flavour
The Jamaican Style Vegetarian Stew Recipe is a lovely spicy, soupy Caribbean stew that has mild spices and the rich flavors of coconut milk. The original recipe had meat and I substituted the meat with vegetables. I also noticed a very strong resemblance to the stew we have in Kerala.
Serve this Jamaican Style Vegetarian Stew Recipe along with Saffron rice for dinner for weeknight or parties.

Ingredients
- 1 Sweet Potatoes , peeled and diced
- 1 cup Kaddu (Parangikai/ Pumpkin) , peeled and diced
- 1 Green zucchini , diced
- 1 inch Ginger , grated
- 3 cloves Garlic , finely chopped
- 4 Thai Red chilli (Birds Eye Chilli) , sliced
- 400 ml Coconut milk
- 200 grams Spinach Leaves (Palak) , roughly chopped
- Salt and Pepper , to taste
How to make Jamaican Style Vegetarian Stew Recipe
To begin making the Jamaican Style Vegetarian Stew Recipe, heat a tablespoon of olive oil in large saucepan.
Add the ginger, garlic and saute for a few seconds. Add the all the vegetables- except the spinach, sprinkle some salt, water and turn the heat to low. Cover the pan and allow the vegetables to get cooked partially.
Finally add the coconut milk and spinach and simmer for about 20 minutes until all the vegetables are tender and cooked.
Once done, check the salt and pepper and adjust the taste of the Jamaican Stew according to taste.
