The Maharastrian Batatyachi Bhaji is a simple and quick recipe that you can make with potatoes. It has the least amount of spices and uses very less oil in cooking making it very healthy to eat. Curry leaves, ginger and green chillies add a subtle flavour to this amazing potato fry recipe. Batatyachi Bhaji is usually served as bhog for lord Ganesha. In case you are making it for bhog then skip the onions in the recipe.

  • 2 Potatoes (Aloo) , boiled and coarsely chopped
  • 1 Onion , roughly chopped or sliced
  • 1 inch Ginger , grated
  • 2 Green Chillies , finely chopped
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 2 sprig Coriander (Dhania) Leaves , finely chopped
  • Salt , to taste
  • Ingredients for the seasoning
  • 1 tablespoon Oil
  • 1 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1 teaspoon Cumin seeds (Jeera)
  • 1/2 teaspoon Asafoetida (hing)
  • 1 sprig Curry leaves

How to make Maharastrian Batatyachi Bhaji Recipe-Quick and Simple Aloo Sabzi

  1. To begin making the Maharastrian Batatyachi Bhaji Recipe, we prepare all the ingredients and keep them ready.

  2. Heat the oil in a heavy bottomed pan; add mustard seeds, cumin seeds and allow it crackle.

  3. Add in the ginger, green chillies, onions, curry leaves, and asafoetida.

  4. Saute for a few minutes until the onions turn soft. At this stage add in the turmeric powder, salt and potatoes. Stir well until all the ingredients are well combined.

  5. Cover the pan, turn the heat to low and simmer the Batatyachi Bhaji few minutes until the aloo is well combined into the masalas.

  6. Once the potatoes are done check salt to taste and stir in the coriander leaves.Remove Maharastrian Batatyachi Bhaji into a serving bowl.
