Ripe Jackfruit Cake Recipe- Goan Pansache Dhonas
Ripe Jackfruit Cake Recipe, is a yummy cake made with fresh sweet ripe jackfruit. This unique Goan cake is steamed first and then shallow fried to give a crunchy bite.
Ripe Jackfruit Cake, also known as Pansache Dhonas is a traditional dish that is unique to Goa.
In konkani, jackfruit means "Panas" while, Dhonas is a baked preparation made from jackfruit or cucumber, rava, grated coconut and jaggery. Normally the "rasal" variety of jackfruit is used as it gives better "mhov" meaning honey.
The cake can be steamed or baked, in Goa, it is usually cooked in an earthen pot directly over the wood fire with heat generated on top by the slow burning coconut husks placed on the lid.

Ingredients
- 3 cups Jackfruit Ripe (Kathal) , pureed
- 1 cup Fresh coconut , grated
- 1/2 teaspoon Salt
- 1 cup Sooji (Semolina/ Rava)
- 1 cup Jaggery
- 2 teaspoons Cardamom Powder (Elaichi)
- 10 Cashew nuts , chopped
- 5-10 Slivered Almonds (Badam)
- 10 Sultana Raisins
How to make Ripe Jackfruit Cake Recipe- Goan Pansache Dhonas
To begin making the Ripe Jackfruit Cake Recipe, we will first dry roast the semolina.
Heat a pan, on medium heat, and add the semolina. stirring continuously, for 12-15 minutes till aroma wafts into the air. Once it is roasted, turn off the heat and allow it to cool.
Deseed the jackfruit. Keep the seeds away, you can use them in another recipe. We will not be using the seeds for this recipe.
Place the pulp of the jackfruit into a blender and make a smooth puree.
In a large bowl, combine the roasted semolina, jackfruit pulp, grated coconut, salt, jaggery, ccardamom powder, cashew nuts, almonds and raisins.
Mix all these ingredients well, until the jackfruit cake batter comes together.
Grease a cake pan and pour this jackfruit cake batter into it. Prepare the steamer by adding water and bringing to a boil on medium heat. Place the cake pan with the jackfruit cake batter in the steamer for 20 minutes.
After 20 minutes, remove the cake pan from the steamer and allow the jackfruit cake to cool.
Once the jackfruit cake has cooled, demould it.
Heat ghee in a frying pan; place the jackfruit cake on it and pan fry it until lightly crisp, flip on the other side and cook well on both sides.
