Just make sure not to wash it, else it will get soggy Once you have cut off the leaves from the stem,put the leaves in a container and cover it with a newspaper or a kitchen towel so that it can absorb the moisture. The sprouts and raita can be prepared in the morning, just add salt before serving as the carrot will start leaving water when salt is added.
