Japanese Senbei Recipe- Rice Crackers In Indian Flavours
Senbei are traditional Japanese crackers made from rice flour and rice. Give this fusion Japanese Senbei flavoured with Indian spices a try. The wonderful blend of spices and aromatics used go well with the rice crackers.
Senbei is a Japanese rice crackers recipe whose main ingredients include rice flour, cooked rice, oil, flavourings or spices of choice, soy sauce, and mirin. These savoury crackers may be fried or baked and make a great tea time snacks.
To suit our Indian palate I have decided to make a very desi- version of it aka 'Biryani flavored Senbei' crackers. The base is still rice flour and cooked rice but it is flavoured with our traditional masalas and spices. These rice crackers are gluten free, eggless and contain no baking powder or soda. These baked crispy treats may be served with a variety of dips.

- I used plain rice. But you can enhance the flavor by cooking the rice with - saffron/ vegetable stock/ with the whole spices.
- The choice and quantity of the spices can be altered to suit your taste buds.

Whole Spices:
- 2 Bay leaves (tej patta)
- 4 Cloves (Laung)
- 4 Cardamom (Elaichi) Pods/Seeds
- 1 Star anise
- 1 inch Cinnamon Stick (Dalchini)
- 2 Mace (Javitri)
- 1 teaspoon Cumin seeds (Jeera)
- 1/2 teaspoon Kalonji (Onion Nigella Seeds) Ground Spices:
- 1/2 teaspoon Coriander Powder (Dhania)
- 1/2 teaspoon Kashmiri Red Chilli Powder
- 1/4 teaspoon Garam masala powder , (optional) Other Ingredients
- 1/2 cup Rice flour
- 1/2 cup Cooked rice
- 2 tablespoons Butter (Unsalted)
- 1/4 teaspoon Ginger , grated (optional)
- 1/4 teaspoon Garlic , minced (optional)
- Salt , to taste
- Water , or Vegetable stock, (as required)
How to make Japanese Senbei Recipe- Rice Crackers In Indian Flavours
To begin making the Japanese Senbei Recipe- Rice Crackers In Indian Flavours, heat butter in a thick bottomed vessel, on a low heat. Once the butter becomes warm add all the whole spices like the bay leaves, star anise, cardamom, Kalonji, cinnamon and cumin and saute till the aromas are released.
Once done mix in the ground spices like coriander powder, chilli powder and the garam masala along with the ginger and garlic and fry for a few seconds stirring continuously. Do not let the spices burn.Turn off the heat and close with a lid and let this spicy mix rest for about half an hour.
After the resting period we will continue to make the senbei ,In a large mixing bowl sift the salt and rice flour together.
Remove the bay leaf, cardamom peels, cloves,mace and cinnamon stick from the spicy butter.
Mix in the cooked rice and sifted rice flour to the spicy butter and bring the mixture together. Knead into a firm dough. You may add water if needed. This depends on how moist or dry your cooked rice is.
Preheat the oven at 180 degrees for 10 minutes.
Roll out the Senbei Rice Crackers dough and cut out desired shapes.
Place on a baking tray lined with parchment paper.
Bake at 150 degrees for 10 minutes. Flip the Senbei and continue to cook for another 5 minutes till the rice crackers turn light brown and crisp.
Allow the Senbei Rice Crackers to cool and store in an airtight jar once completely cooled.
