- 2-1/4 cups All Purpose Flour (Maida)
- 1 cup Instant Oats (Oatmeal)
- 1 teaspoon Baking soda
- 1 cup Butter (Salted) , at room temperature
- 1/4 cup Caster Sugar
- 1/4 cup Brown Sugar (Demerara Sugar)
- 2 teaspoons Vanilla Extract
- 2 Whole Eggs
- 1 cup Cranberries
- 1 cup Dark Chocolate Chips
- 1 cup Walnuts , chopped
How to make Oatmeal Cranberry Cookie Recipe
To begin making the Oatmeal Cranberry Cookie Recipe, preheat the oven to 180 C. Prepare the baking sheet by lining it with parchment paper.In a large bowl, combine the flour, oats, baking soda and salt and keep side.Cream the butter, castor sugar, brown sugar and vanilla until light and fluffy. Add the eggs one by one and beat into the butter mixture. Gradually add in the flour to the butter and egg cookie mixture and beat until well blended.Finally stir in the cranberries, chocolate chips and walnuts to the oatmeal cookie dough.
Drop the mixture in spoonfuls onto the prepared sheets, spacing them 2 inches apart. The cookies expand while baking, so take care to give space.Place the baking sheet to the oven and bake the Oatmeal Cranberry Chip Cookies for about 8 to 10 minutes or until they are firm.
Let the cookies sit on the baking sheet for a few minutes as they continue to cook a little more while sitting on the hot tray.
