How to make Spicy Mushroom Pulao Recipe | Easy and Flavorful Kumbh Pulao

  1. To begin making the Spiced Kumbh Pulao Recipe, prep all the ingredients and keep them ready

  2. Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in enough water for about 20 minutes. Drain and set aside.

  3. Heat ghee in a heavy-bottomed pan over medium heat. Add the cumin seeds, bay leaf, cinnamon stick, cardamom pods, and cloves. Sauté for a few seconds until they release their aroma.

  4. Add the thinly sliced onions, ginger, garlic and green chillies to the pan and sauté until they turn golden brown. This step is crucial as it adds depth of flavor to the pulao.

  5. Stir in the chopped tomatoes and cook until they turn soft and mushy. Add turmeric powder, garam masala powder, and salt. Cook the mixture until the ghee starts to separate from the masala.

  6. Add the sliced mushrooms to the pan. Sauté the mushrooms on high heat until they are golden brown and any moisture released by the mushrooms evaporates. This step ensures that the mushrooms retain their texture and flavor.

  7. Add the soaked and drained basmati rice to the mushroom mixture. Gently stir to coat the rice with the spices and mushrooms, being careful not to break the rice grains.

  8. Pour in 1-1/2 cups of water and bring the mixture to a boil. Once it starts boiling, reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for about 15-20 minutes. Do not open the lid while cooking to ensure the rice cooks evenly and absorbs all the flavors.

  9. Once the rice is cooked and the water is fully absorbed, turn off the heat. Let the pulao sit covered for another 5 minutes to allow the flavors to meld together. Fluff the rice gently with a fork.

  10. Garnish the Spicy Mushroom Pulao with freshly chopped coriander leaves.

  11. Serve the Spicy Mushroom Pulao with a side of Tomato Onion Cucumber Raita Recipe or Pudina Dahi Chutney Recipe.  For an added crunch, you can also serve Papad or Masala Chips on the side. You can also pair the pulao with Paneer Butter Masala or Dal Makhani.
