We have used Mother's Recipe Ginger Garlic Paste in this dish, which had no preservatives and had the aroma and taste of fresh ginger and garlic.  It came as a brilliant addition to the kitchen because there was no need to clean, peel nor mince ginger and garlic and this dish got ready in a jiffy. All we had to do was take a spoonful of the Ginger Garlic Paste and use it to make this delicious vegetable.

Ingredients

  • 1 Onion , cut into chunks
  • 1 cup Broccoli , cut into florets
  • 1 Red Bell pepper (Capsicum) , cut into diced
  • 1 Carrots (Gajjar) , cut into rounds
  • Salt and Pepper , to taste
  • For the sauce
  • 1 teaspoon Mother's Recipe Ginger Garlic Paste
  • 2 Green Chillies , finely chopped
  • 1/2 cup Spring Onion Greens , finely chopped
  • 1 tablespoon Corn flour
  • 1 tablespoon Tomato Ketchup
  • 1 tablespoon Red Chilli sauce
  • 1 teaspoon Vinegar
  • Salt , to taste

How to make Sweet and Spicy Szechuan Style Vegetables In Ginger Garlic Sauce

  1. To begin making the Sweet and Spicy Szechuan Style Vegetables In Ginger Garlic Sauce, first prep all the vegetables and keep the ingredients ready.

  2. Heat oil in a wok over medium heat; add the onions, capsicum, broccoli and carrots. Stir-fry until the vegetables are just about cooked.  Once they are cooked, keep aside.

  3. The next step is to prepare the sauce. In a small mixing bowl, combine the corn flour, 1 cup of water and make a smooth paste. Add the remaining sauce along with vinegar and salt.

  4. Heat a teaspoon of oil in the same wok over medium heat; add the Mother's recipe ginger garlic paste, spring onions, green chillies and sauté for a few minutes until the raw smell goes away. To this add the cornflour and Schezwan sauce mixture.

  5. Keep stirring until the sauce thickens and cooks completely. Once done, add in the stir-fried vegetables and give it a brisk boil.

  6. Once done, turn off the heat and serve along with Chinese Fried Rice for a wholesome weeknight dinner.
